How to cook tagine
Tagine is a traditional North African dish cooked slowly
in an earthenware. It takes about one-and-a-half to two hours to cook, although
Neil Perry of BBC Food reckons it can be done
in 30 minutes.
It takes Delphine about two hours to prepare a tagine meal for eight. You
can use lamb for tagine, but for our tagine, chicken is used as the main
ingredient. Edward, Delphine's husband, chopped the vegetables.
