How to eat paella in Córdoba, Spain...
With friends and plenty of time. The best time to enjoy seafood in southern Spain is mid July when temperature soars to 45-50 celcius. Juan Bolaños Jurado invited us to dinner on his patio. We met downtown at the El Correo (a local pub named after an old post office) where everyone meet after work. We started cooking at 11pm and eventually had dinner around 1am (It takes 30-45 minutes to prepare paella). Incidently, the town still buzzed until late morning for the 2-week Guitar Festival. This is Andalusia - you don't rush anything.
